Yesterday I noticed I had a bunch of brown bananas and even more fruit flies, so I whipped up a quick loaf of banana bread. The kids ate it all up after school, so I took a picture of what is left. This is the best and easiest recipe I have found. I got it from my sister-in-law, and don’t have an original source.
3 brown bananas, mashed1/3 c. melted butter
1 c. sugar
1 t vanilla
1 t baking soda
1 1/2 c flour
1. Mix melted butter and mashed bananas
2. Add sugar, egg and vanilla
3. Add baking soda and salt
4. Add flour
5. Pour in loaf pan
1/4 c. brown sugar
3 T flour
2 T butter, cold, cut into pieces
1/3 c. nuts (optional)
Mix all items in bowl (I just use my hands), and crumble on top of the batter in the loaf pan.
Bake approx 45 minutes on 350. I cover with foil around 35 minutes because it tends to brown too much before the inside is done.
