I learned how to make this from my mother in law, so it has a bit of Indian food flavor. It’s a great meal that you can whip up quickly. I use Ball Park beef hot dogs, but you can sub and make this MUCH healthier with chicken/turkey or whatever favorite you have. When I was making this my husband actually said “Tell me those aren’t chicken hot dogs.” So, no subs for me.
1 package hot dogs, sliced
3-4 cups cooked rice
1 large tomato, diced
1 large onion, diced
1 green chili, diced (optional)
3 eggs, scrambled
1-2 t crushed red pepper, depending on spice level you want
1/4 t turmeric (optional)
1-2 T oil
salt to taste, about 1-2 t
Brown onions, chili and tomato in oil in pan on medium for about 10 minutes until it cooks down to a sauce. You can add a little water if it starts to get too dry.
Fry sliced hot dogs in a separate pan until done.
Then add scrambled eggs, salt, and crushed pepper to tomato/onion mix, cook until eggs done. Next add cooked rice and turmeric and stir. Finally, add the cooked hot dogs and stir until blended.
